Irresistible Mutton Dum Biryani Recipe | Step-by-Step Guide

Ingredients

  21. Poppy seeds
  22. Garlic
  23. Onion
  24. Ginger
  25. Potato
  26. Yoghurt
  27. Milk
  28. Ghee
  29. Dried plum
  30. Oil

For Garam Masala

  1. Cardamom (4 medium sized)
  2. Cinnamon (4-5 pcs)
  3. Black pepper (1tsp)
  4. White pepper (1tsp)
  5. Sweet Cumin seeds (2tsp)
  6. Coriander seeds (1tsp)

Take a pan. Roast these spices together. Then grind them all.

For paste

  1. Onion
  2. Garlic
  3. Poppy seeds
  4. Cashew nuts
  5. Green chili
  6. Ginger

Mutton Preparation

1.Take a saucepan and add 3 kg of mutton.

2. Pour 2 liters of water.

3. Add 5 cubes of chopped onion, 5 to 6 pcs. of cardamom, some cinnamon, some black pepper, some cubeb, 4 to 5 pcs. of bay leaves, some cloves, and salt as required.

4. Turn on the heat.

5. Put the lid on the saucepan.

6. Cook the mutton until it is 60% done.

7. After cooking, remove all mutton pieces. Separate 600 ml of mutton stew from the excess water and discard the rest of the spices.

Marination

1. Cooked mutton.

2. Paste spices.

3. Garam masala

4. Add 1 roughly crushed nutmeg, a little bit of mace, 1 piece of star anise, 2 black cardamom, 2 tbsp. of red chili powder, 2 tbsp. of yogurt, 1 tsp. of cubeb pepper, and 1 cup of fried onion.

5. Add 1 cup of oil

6. Mix it well and cover with a lid. Let it rest until your rice preparation is done.

Rice Preparation

1. Take 1 kg of basmati rice. Give it a gentle wash and soak it in water for 30 minutes. after 30 minutes of soaking, drain out the water from the rice using a strainer and let it strain to remove excess water.

2. Take a saucepan and fill it with enough water to cook your rice.

3. Turn on the heat.

4. Add 4 pcs. of cardamom into the water, some cinnamon, 1 tsp. of black cumin seeds, and some salt.

5. Once the water is boiling, add the rice.

6. Gently stir the rice with a spatula. After exactly 5 minutes, your rice will be 80% done.

7. Turn off the heat.

8. Drain all the water from the rice.

Cooking

1. Now, take a large saucepan suitable for cooking and fitting both 1 kg of cooked rice and 3 kg of marinated mutton.

2. We are going to make two layers now. First, pour the marinated mutton into the bottom of the saucepan to create the first layer.

3. Take 6 pcs. of potatoes, cut them in half, and sauté them lightly in oil along with a bit of turmeric powder and salt. Spread out these potatoes on top of the mutton, along with some dried plums. Add some bay leaves. Spread out some green chili and add 300ml of Mutton stew.

4.Finally, pour the rice on top of the first layer of mutton

5. Mix 3 tbsp. ghee with 300ml of hot milk. Make some small holes in the rice and pour the saffron-milk mixture. Also, spread out 300ml of Mutton stew.

6. And spread out some fried onions over the rice.

7. Now, for the fun part. Take 500 g or as required of wheat and make a normal dough. Shape this dough into a rope. You can prepare it before starting of cooking.

8. Wrap this rope-shaped dough around the top edge of the saucepan.

9. Cover the saucepan with its lid and seal it completely using the dough rope.

10. Put an additional pan on the stove because we don’t want to transfer the heat directly to the food. Turn on the heat and place your saucepan on top of it.

11. Turn on the heat to medium and set a timer for 50 minutes on your phone.

12. Turn off the heat and wait for another 10 minutes before opening the lid.

13. After 10 minutes, you can break the seal and open the lid. Be prepared to be overwhelmed by the aroma.

Pro tips: Take two separate bowls, one for keeping the rice and another for the gravy mutton. Do not mix them together.
